     I originally found this recipe online while looking for crockpot dishes. I'm a Mom and always looking for easy and kid friendly dishes. And this is both! It's a Cheesy potato chicken bake. Chicken,tater tots,bacon and cheese. What kid or even husband would say no to that? Honestly I thought would come out as a big pile of mush! But the totts stay crisp and those on the bottom almost come out to the consistency of hash browns.  





Here's how to make this super easy dish!

Ingredients:

1 bag of Tater Tots
2 lbs of Boneless Skinless Chicken Breasts/Tenderloins cut into pieces
1/2 cup milk
2 cups of Sharp Cheddar Cheese, Shredded
non stick pan spray
1 lb Bacon, cooked (or you can use real bacon bits to save time)
Chopped Scallions
Salt & Pepper to taste

Directions:

Spray the inside with your non stick spray.  place a single layer of tater tots in the bottom.  Add a thin layer of bacon bits or cooked bacon pieces.  Next add a thin layer of cheddar cheese.  Lastly, add a single layer of your cut up chicken.  (Some people have made this dish using whole boneless skinless chicken breasts, however, I cut it up or buy cut tenders to make it easier)

Continue to layer the crockpot until you have used your ingredients, making sure to use tater tots and cheddar cheese as your top layers.  

Cook on low for 6 - 8 hours.  Top with scallions when serving.
